Mangú Recipe

Ingredients:

• 3 green plantains 
• 1 teaspoon salt 
• 2 tablespoons butter or olive oil
• 1/2 cup water or milk
• 1 small red onion, thinly sliced
• 1 tablespoon vinegar 
• Salt and pepper to taste

Instructions:

  1. Peel and boil the plantains: Cut the ends off the plantains, make a slit along the length, and peel. Boil them in salted water until they are tender (about 20-25 minutes). 
  2. Mash the plantains: Drain the plantains and mash them while still hot. Add butter or olive oil and water or milk to achieve a creamy consistency. 
  3. Prepare the onions: In a small pan, sauté the onions in a bit of oil until they are soft. Add vinegar, salt, and pepper to taste. 
  4. Serve: Top the mashed plantains with the sautéed onions.
